Wheat Alternative Flours and Bread mixes
Many people seeking information from our dietary section have been referred by dietitians or medicos with advice to avoid wheat or specific products such as dairy, yeast, gluten etc.
Do you need to avoid all gluten,(such as those diagnosed with coeliac disease) or do you need simply to avoid wheat gluten?

Those diagnosed with Coeliac disease should examine those products listed under "Gluten Free" which may suit their needs. Many Coeliacs are (quite rightly) disappointed by what passes for breads and rolls in supermarkets and bakeries. We encourage our customers to set their sights and expectations high. Our products enable excellent breads, rolls and cakes to be baked at home either in bread machines or by use of thermo machines and oven baked.

Storage of Baked Bread
The crust on a loaf provides its primary protection from drying out and staling. Storing the bread in a bread box or bread crock provides protection from the drying effectes of air conditioning and household heating. Storing in a plastic bag creates a humid environment and draws the moisture from the middle of the bread through the crust thus removing the loafs protection and creating a humid environment for development of mould.
